Ayam Goreng Berempah ( Chicken Fried with Spices)

AYAM GORENG BEREMPAH 

BAHAN2 : 

1/2 ekor ayam-potong ikut suka, dibersihkan dan toskan.. (1/2 Chicken, cut)
1 labu bawang besar* (1 Onion) 
5 ulas bawang merah* (5 shallots), 3 ulas bawang putih* (3 cloves garlic)

2 inci halia*  (2 inch Ginger)

2 inci lengkuas*  (2inch Galangal – I use powder abt 1/4 tsp)
1 inci kunyit hidup* (1inch Turmeric)
1 sudu besar serbuk kari daging* (1tbsp Curry Powder)
1/2 sudu besar serbuk cili* (1/2tbsp Chili Powder)
5 batang serai-dihiris kasar* (5 Lemongrass, sliced)
1 sudu besar biji ketumbar *  (1tbsp Corriander)
1 sudu besar jintan manis* 
1 /2 sudu besar jintan putih* 
1 sudu besar lada hitam*(kisar halus bahan beranda*) (blend all * ingredients)
Garam secukup rasa dan sedikit gula (Salt & Sugar to taste)
2 tangkai daun kari ( Curry leaves)

Minyak secukupnya untuk menggoreng (Oil for frying)

CARA::

Gaulkan ayam dengan bahan2 kisar, (Marinate chicken with the blended ingredients, salt & sugar. Leave it for 1-2 hrs)
Garam dan gula..Perap selama 1-2 jam. 
Panaskan minyak secukupnya dan goreng ayam hingga separuh masak,  (Heat enough oil & fry chicken till half cook.)
Taburkan daun kari dan goreng hingga ayam betul2 masak. (Add curry leaves & fry till chicken are totally cook) 
Angkat ayam dan tapis serdak…sedia untuk dihidangkan… ( Strain chicken & serve)

 

I don’t have curry leaves, so I leave it out but I add cut dry chili instead. I also low broil the chicken after straining it becos my pan is not big enough to fit all of it…
